Chin Shin Bug-bitten Pekoe
Chin Shin Bug-bitten Pekoe
Farmer Shiwei, working at his tea garden in Cui Feng, Taiwan, produced only 10kg of this very special tea. The leaves were only harvested at the end of the mountain Summer, giving them many months to collect a particularly full and powerful aroma, and were then more strongly oxidised than is usual for this cultivar. The leaves were also attacked by a tiny green insect – Jacobiasca Formosana – which bites the leaves, causing the plant to protect itself by producing terpenols. The combination of the spicy, muscatel aroma of these terpenols, the late, high-altitude harvest and the loose rolling and light roasting by Mr. Lin has created a fabulously aromatic and unusual tea which is fun, flowery and spicy with wild-ginger and mango notes.
Flavour profile: floral, wild ginger, yellow fruit, round, sunny, playful
