A soft and comforting fermented Tea from famous Yunnan mountains, easy to brew and with a quiet complexity of flavours.
This tuo cha comes from Jinuo Shan in Xishuangbanna, from a small naturally farmed garden and young factory run by Lee Du Nan.
This is a mild, gentle and well-aged shu that will not turn bitter or astringent - easy for beginners but great for anyone becasue of its soft complexity: There are hints of forest floor and fine wood, with a warm, sweet and gently spiced note like tonka bean. An easy and acessible tea that has a comforting character and is exciting to discover.
We're happy to offer this tea from the collection of Olivier Schneider, a tea expert with over 20 years of experience researching Pu'er taste, processing and culture. After a decade in Yunnan, he now lives in Thailand, where he cultivates a centuries-old tea garden and continues to share his knowledge through teaching and writing.
Best brewed gong fu style: use a ca. 100ml gaiwan or small teapot with 5-9g of tea (break off as much as needed). Start with a 5-second infusion at 95°C, then add about 5 seconds to each steep that follows.
